White Turkey Chili Recipe
I’d like to thank my mother-in-law Lisa for this incredible spin on my typical winter chili recipe.
1 lg. onion chopped (about 1 cup)
2 cloves garlic, finely chopped
¼ c. butter
4 cups cooked chicken (can be roasted chicken sold in stores or cook yourself).
*** i use turkey instead! (about 1 ½ lbs). ** . If you use the turkey, cook with olive oil in the soup pot first. Remove from pot and begin recipe.
3 cups chicken broth
2 tsp fresh cilantro (or more) Or it can be omitted.
1 tbsp dried basil
1 tsp cayenne pepper (add more or less as desired)
¼ tsp ground cloves
2 15 oz. cans great northern beans (cannelli), drained
1 medium tomato chopped
tortilla chips, broken up
grated cheddar cheese (could use white cheddar)
sour cream? yogurt?
onions of your choice?
(Reminder: If you use the turkey, cook with olive oil in the soup pot first. Remove from pot and begin recipe.)
1. Cook & stir onion & garlic in butter in 4 quart Dutch oven until soft and fragrant, but not browned (I add the garlic a few minutes after the onion so it won’t get too browned).
2. Stir in remaining ingredients.
3. Heat to boiling.
4. Cover and simmer about 45 minutes to an hour
5. Serve with toppings of your choice!
